Salmon Chowder With Corn

- 1/2 lb. frozen skinless salmon fillets , thawed... shopping list
- 1 stalk chopped celery shopping list
- 2 tbsp. olive oil shopping list
- 1 onion chopped shopping list
- 2 cups low salt chicken stock shopping list
- 3 potatoes chopped shopping list
- 1 can kernel corn.. drained shopping list
- 1 tsp. lemon juice ,fresh if possible. shopping list
- freshly chopped dill , optional shopping list
- salt and pepper shopping list
How to make it
- in a sauce pan add oil and heat
- cook celery and onion for about 5 mins.
- add stock, potatoes.
- bring to boil, turn heat down and cooked covered until potatoes are just tender.
- mix in the salmon , corn and cook for 7 -- 8 min.
- mix in 1 tsp. or more to taste of fresh lemon juice
- salt and pepper.
- serve sprinkled with fresh chopped dill if you like..
