How to make it

  • Make the batter:
  • Beat egg with water.
  • Combine flour. salt, pepper and baking powder
  • Whisk both mixtures smooth and lump free and refrigerate
  • Make sandwiches:
  • Spread some mayonnaise on one side of the eight pieces of bread
  • Place on on each 4 slices: 2 pieces of salami, 2 pieces of ham, two pieces of turkey, 1 slice of cheese
  • Close 2 pieces of bread together so you will have made a sandwich
  • With a shape knife cut off crusts -this will companct the cold cut filling inside
  • Place the 4 sandwiches on a platter and , close tightly with plastic wrap to further seal and compress sandwiches- this can be done 30 minutes up to a few hours ahead of time
  • When ready to prepare, heat oil in a heavy duty fry pan, or an electric fry pan at least an inch in depth at least to 365 F or oil is ready for frying.
  • Carefully dip each sandwich into the batter ( stir again when out of the refrigerator ) , coating each side well.
  • Carefully slide in hot oil ( I could fit 2 into my heavy duty fry pan ) frying crisp and golden brown on each side, turning once on each side
  • Remove to paper toweling to drain
  • Repeat with other two sandwiches
  • I carefully cut each sandwich half
  • Dust sandwiches with powder sugar
  • Serve with a little dish of cherry preserves on the side.
