  • 1 quart of water
  • 2 bay leaves
  • 1/2 cup of sugar
  • 1/2 cup of salt
  • one long lemon peel, no pith
  • 3 whole cloves
  • 1 yellow onion sliced thin
  • 1/4 tsp of crushed red pepper
  • *********************************
  • 2 lbs. of shell-on 26-35 count shrimp *over 35 are too small
  • 1 lb of unsalted butter NO MARGARINE, melted but not hot
  • 1 whole tin of milled black pepper- one ounce
  • 2 whole lemons squeezed, no seeds
  • 1 generous shake of Worchestershire sauce
  • 2 generous pinches of coarse ground salt
  • Loaf of good crusty french bread (warmed)

Directions
  1. Bring the water to a boil, add the seasoning, sugar and salt. Stir to melt the sugar and salt. Immediately set your pot in a bucket of ice to bring down the temp. Stir to cool. You want a cool bath to soak your shrimp in for one hour. DO NOT USE a HOT BRINE!
  2. Add shrimp to brine and refrigerate for the hour.
  3. Remove shrimp from brine and pat dry.
  4. Preheat the oven to 425 degrees.
  5. In a 13 x 9 pan with sides, put in the patted dried brined shrimp and the melted butter and dash of worchestershire, and lemon juice.
  6. Sprinkle generously with the whole can of fine milled pepper and pinches of sea salt. You don't want it watery, the drier the shrimp you put it the better.
  7. Toss with your hands.
  8. Cook in hot oven for 5 to 7 minutes. Stir once and cook for 3 to 5 minutes more.
  9. Put pan on a heavy trivet in the middle of your table and pass extra lemon, and huge chunks of warmed bread. Be sure to have plenty of napkins and bowls for shell discards.
  10. Now, the way to eat these is really quite simple.
  11. Suck the shrimp unpeeled to get the flavor of the sauce, then peel and pop that shrimp in your mouth and swoon.
  12. Dip the bread in the butter in the dish and fight your neighbor for the last drop.
  13. Some drink wine, others swear a cold beer is best, kids like lemonade. If you must have a salad....go for cukes and onions in sour cream to tame the flame of the black pepper.
  14. This is a dish you have with people you are quite comfortable with, the kind that can kick off their shoes and help with the dishes. NOT for the boss or the new neighbor or new-in-law. Enjoy.
