How to make it

  • First off prep all ingredients...a major help for the entire cooking process.
  • In a dutch oven (or any large pot with high sides) coat bottom with olive oil and set to medium/high heat. Add sausage and cook until they are all browned on the outside, about 5 - 7 minutes. Add onions, peppers, red pepper flakes and sautee until just wilted down. Add garlic and celery salt continuously mix for 1 - 2 minutes. Add diced tomatoes, clam juice, chicken broth, hot sauce, bay leaves, and thyme. Bring up to a rolling boil, cover and reduce heat to a simmer. Simmer for about 30 minutes, until sauce has reduced by about half. Add clams and shrimp, and simmer for another 5 - 8 minutes, until shrimp have cooked and turned pink. Serve in a deep bowl and top with rice.
  • NOTE...at the last few minutes I added frozen peas to bring in another layer of flavor. That is completely at your discretion, but it was really great.
