Mardi Gras Jumbalaya

- 1 medium/large yellow onion, diced shopping list
- 2 bell peppers (I used red and green, but any variation), chopped shopping list
- 1 can diced tomatoes (i found a fennel and roasted garlic flavor that totally worked) shopping list
- 1 lb andouille (or any spicy sausage cut into rounds) shopping list
- 1/2 lb peeled deveined shrimp shopping list
- 1 can chopped clams, liquid reserved shopping list
- 1 3/4 cup chicken broth shopping list
- 4 large garlic cloves, minced shopping list
- 1 tsp (more or less to your taste) shopping list
- 1 1/2 tsp celery salt shopping list
- a couple shakes hot sauce shopping list
- 2 - 3 bay leaves shopping list
- 1 tbsp thyme shopping list
- olive oil shopping list
- cooked rice shopping list
How to make it
- First off prep all ingredients...a major help for the entire cooking process.
- In a dutch oven (or any large pot with high sides) coat bottom with olive oil and set to medium/high heat. Add sausage and cook until they are all browned on the outside, about 5 - 7 minutes. Add onions, peppers, red pepper flakes and sautee until just wilted down. Add garlic and celery salt continuously mix for 1 - 2 minutes. Add diced tomatoes, clam juice, chicken broth, hot sauce, bay leaves, and thyme. Bring up to a rolling boil, cover and reduce heat to a simmer. Simmer for about 30 minutes, until sauce has reduced by about half. Add clams and shrimp, and simmer for another 5 - 8 minutes, until shrimp have cooked and turned pink. Serve in a deep bowl and top with rice.
- NOTE...at the last few minutes I added frozen peas to bring in another layer of flavor. That is completely at your discretion, but it was really great.
