Italian Sausage Marco Polo

- • Two or three usual size italian sausage, cut into medium size chunks. shopping list
- • 1 Tbs olive oil. shopping list
- • ½ lb (250g) pasta. I used linguine for this. shopping list
- • 1 cup fresh asparagus, cut at about 2” (5cm). shopping list
- • ½ stalk celery, chopped. shopping list
- • 1 small onion, chopped. shopping list
- • 1 clove garlic, crushed and chopped shopping list
- • 1 small roasted bell pepper, that I had stashed in some olive oil, chopped course. 15ks Of Bad Road Peppers shopping list
- • 1 to 1 ½ cups cubed zucchini. shopping list
- • 1 medium tomato, cubed small. shopping list
- • 2 or 3 fresh mushrooms, sliced. shopping list
- • A bit of flour & water for thickening. shopping list
- • 2 to 3 Tbs sour cream. shopping list
- • salt & fresh ground pepper to taste. shopping list
How to make it
- 1. Cook the pasta al dante, according to package directions, rinse and set aside.
- 2. Prep the onion, celery, & garlic & put into a small bowl.
- 3. Prep the tomato, asparagus, mushrooms, roasted bell pepper & cubed zucchini and put into a small bowl.
- 4. In a large skillet, or shallow pot, heat the olive oil and saute the onion and that bowl of stuff until the onion is soft & translucent but not brown.
- 5. Add the sausage and saute until you think it’s about half cooked.
- 6. Add the bowl with the tomato and such and saute until the sausage is done.
- 7. Use a bit of the flour and water to thicken the juice just a bit.
- 8. Turn of the stove and let this lot rest for five minutes.
- 9. Add the sour cream and stir to get a bit of sauce.
- 10. Warm the pasta in the nuke furnace and spoon the sauce from your goody pot over it.
- 11. Salt & F/G pepper to taste.

- This is a left handed dish that sounds a lot more difficult than it really is. I did a very simple tossed green salad to go with it and that worked fine. I had some decent French bread and that helped get this concoction on the fork. My daughter, who is almost as strange as I a, sprinkled a wee bit of Parmesan cheese on top.
- A decent glass of Chianti and Julio Iglesias singing something that sounds Italian, but probably isn’t, doesn’t hurt.
