Crisp Slaw Filled Wraps

- 1 1/2 cups jicama, peeled and cut into matchsticks shopping list
- 1 carrot, peeled and grated shopping list
- 1/4 cup pumpkin seeds shopping list
- 1/3 cup raisins shopping list
- juice and zest of 1 lemon, divided shopping list
- 1 tsp olive oil shopping list
- 1 cup cooked chickpeas shopping list
- 1/4 tsp cumin shopping list
- 1/2 tsp garlic powder shopping list
- pinch cayenne pepper shopping list
- pinch black pepper shopping list
- pinch salt shopping list
- 2 large gluten-free tortillas, such as Food For Life brand, warmed until pliable shopping list
How to make it
- Toss the jicama, carrot, seeds, and raisins together. Squeeze half the lemon juice overtop and drizzle with the oil.
- Mash the chickpeas with the cumin, garlic powder, cayenne, pepper and salt.
- Divide chickpea mixture between the two tortillas and top with even amounts of slaw.
- Roll up and enjoy!
