How to make it

  • In a medium-sized non-metal bowl, combine the turkey cubes, 2 TBS oil and spices until turkey is well-coated. Marinade this while preparing the rest.
  • Cut the bacon into 1" squares.
  • Cut the onions in half and then into strips.
  • Seed the peppers and cut into 1" squares.
  • In a large skillet, sauté the bacon until crisp.
  • Remove with slotted spoon and set aside.
  • Add the 1 TBS oil to rendered bacon fat and in it, sauté the onions and peppers about 3 minutes or until beginning to get soft.
  • Add the turkey and spices and cook on high heat, stirring constantly, just until turkey is no longer pink.
  • Deglaze pan with chicken broth, stirring, then turn heat to low and simmer 5 minutes or just until a sauce forms.
  • Add bacon squares back in and stir to heat.
  • Serve hot over rice; good with a green salad.
