Quick Tomato Soup

- 1/2 c. ea. diced carrot, celery, onion shopping list
- 1 tsp. olive oil shopping list
- 1 clove garlic, minced shopping list
- 1/2 tsp. dried basil shopping list
- 1 - 14.5 oz. can vegetable broth (low sodium if you have it) shopping list
- 1 - 14 oz. can Italian-style diced tomatoes shopping list
- 1 - 6 oz. can no-salt-added tomato paste shopping list
- Splash cream (or milk, half-and-half - whatever you have on hand) shopping list
- 1 TBSP. minced flat-leaf Italian parsley (optional) shopping list
How to make it
- In medium saucepan, sauté carrot, celery, onion, and garlic in oil until softened.
- Add basil, broth, tomatoes, and paste. Bring to a boil; reduce heat and simmer about five minutes until vegetables are soft.
- If desired, process soup in two batches in blender until smooth; return to saucepan.
- Add cream and parsley, if using, and heat through.
