Sweet And Sour Pork

- 1 lb pork, cut into bite size shopping list
- 2 tsp light soya sauce shopping list
- ¼ tsp salt shopping list
- ½ cup tapioca or corn starch shopping list
- 1 green pepper, cut into 1" size shopping list
- 1 onion, cut into wedges shopping list
- 1 cup pineapple chunks shopping list
- ½ cup sugar shopping list
- 4 Tbsp ketchup shopping list
- 4 Tbsp vinegar shopping list
- Pinch of salt shopping list
- 1 cup reserved pineapple juice (or water) shopping list
- 2 Tbsp tapioca or corn starch (make a thin paste with some water) shopping list
- 1 Tbsp toasted sesame seeds (optional) shopping list

How to make it
- Marinate pork with soya sauce, salt (I marinade the pork in a plastic bag)
- Before cooking, add tapioca starch to the pork and mix well.
- Deep fry the pork pieces until golden brown.
- Remove and drain on paper towels.
- Note: The fried pork can be frozen at this stage for future use. Just reheat in a toaster oven.
- In a small pot, lightly fry the pepper and onion in a little bit of oil.
- Remove to a plate.
- Add sugar, ketchup, vinegar, salt, and juice to the pot and bring to a boil.
- Add tapioca paste, stirring constantly until sauce has thickened.
- Remove from heat.
- Put the pork on a serving plate.
- Top with the pepper, onion and pineapple chunks.
- Pour sauce over and sprinkle with toasted sesame seeds.
