Easy On The Wallet Egg Substitute

- 1 T ground flax seed (golden flax seed is preferred - this will not result in little brown specks in the final product) I also recommend grinding your own flax in a coffee grinder. This will give you a better texture then flax meal you buy already ground, it will be fresher and way cheaper too! shopping list

How to make it
- Place the 1 T Ground Flax into a 1/4 cup measuring container
- Add warm water to equal 1/4 cup
- Stir and let sit for 3 minutes till gooey
- Can be used in pancakes, muffins and cookies
- I have not tried this in cakes - but more then likely it would work well in cakes as well. This mixture emulsifies well and adds Omega 3's to the finished product as well as fiber.
