Big Jim's Meatballs

- 2 lbs ground beef (90% lean) shopping list
- 2 eggs shopping list
- 1 cup Japanese bread crumbs shopping list
- 1 Table. granulated garlic shopping list
- 1 Table. dried basil shopping list
- 2 tsp. oregano shopping list
- 1 tsp. salt shopping list
- my additions: shopping list
- 3/4 cup frozen chopped spinach, thawed, wrung out shopping list
- 1 tsp. fennel, mortar and pestled to release essence shopping list
- angel hair pasta shopping list
- Marinara sauce--I stirred in 1/2 cup pork broth shopping list
How to make it
- Preheat oven to 400 . Combine all ingredients and form into 3 to 4 oz meatballs. Grease a baking pan, and line the balls up. Cover with foil. Bake 25 mins. Check to see if cooked through. (I added 8 mins here) When thoroughly cooked, return to 400 oven for 10 minutes 'til lightly brown. Remove from oven and let the meat "rest" for 15 minutes. Transfer to warm marinara sauce, and hold in oven til dinner!
