Shrimp And Endive Fettuccini

- 12 oz fettuccine shopping list
- 2 tbsp olive oil shopping list
- 2 shallots chopped fine shopping list
- 1 tbsp minced garlic shopping list
- 4 Belgian endives, cored and finely chopped shopping list
- 1/2 tsp salt shopping list
- 1 pkg frozen cooked shrimp, thawed and tails off shopping list
- 2 eggs shopping list
- 1/3 cup skim milk shopping list
- 1/4 tsp white pepper shopping list
- 1/4 tsp nutmeg shopping list
- Pinch salt shopping list
How to make it
- Cook pasta according to package instructions in unsalted boiling water until al dente. Reserve 1 cup of the cooking liquid.
- Meanwhile, heat oil over medium-high heat; sauté shallots and garlic until softened, about 2 minutes. Add endives and salt; sauté until endives are tender, 3 to 4 minutes.
- Stir in shrimp; heat through, about 1 minute. Add pasta and 3/4 cup of the pasta cooking liquid. Cook, stirring, until only half of the liquid remains. Reduce heat to low.
- Whisk together eggs, milk, pepper, pinch nutmeg and salt. Stir into pasta; cook, stirring, until very hot but not simmering. If mixture feels thick, add some of the remaining pasta cooking liquid.
- Serve immediately.
