How to make it

  • Put all the batter ingredients except baking powder and 1/4 parmesan (save the other 1/4 for later) in a food processor and whiz. As soon as you get a smooth batter add the baking powder and pulse once or twice.
  • Sauté the onion in a teaspoon of olive oil.
  • Mix the filling ingredients and add the sauteed onion.
  • Pour half the batter in a greased baking pan. Distribute the filling and pour the remaining batter over it.
  • Sprinkle the remaining parmesan cheese over the batter and put in preheated oven 375F.
  • Bake for 40 minutes or until golden brown.
  • Before cutting into portions let it cool down for 10 minutes. It will be easier to cut.

    Well it is not gluten free because it has flour in the batter ingredients. But it could definitely be transformed if you substitute the flour. It is actually a great idea :-)
