How to make it

  • Put tomatoes in a large cooking pan and cover with boiling water. Let sit about a minute then plunge into ice water. Let sit another minute then remove, cut off ends, and slip the skins off. Core if desired and cut into chunks.
  • Put the tomato chunks in a large pan on medium heat. Add butter, celery, bell pepper, and onion, cover, lower heat and let stew for about 30 minutes. Check and stir now and then.
  • Add spices, taste and adjust seasoning if needed.
