Pasta Fagioli

- 1/2 cup onion shopping list
- 1 garlic clove minced(fresh) shopping list
- 1 cup celery diced shopping list
- 1 cup carrot diced shopping list
- 1 can of garbanzo beans(chick peas), rinsed shopping list
- water shopping list
- 1 can tomato paste shopping list
- Can of whole peeled tomatoes, shopping list
- oregano, basil, salt and pepper sprinkled shopping list
- 1 box of ditalini pasta shopping list
- Parm cheese freshly grated shopping list
How to make it
- Sautée carrot,celery, onion and garlic in 4 tbsp olive oil on low for 8 mins.
- dissect the whole tomatoes, chop and remove seeds, keep juice. Add 6 cups water to big pot, and mix in can of tomato paste, juices from tomatoes. bring almost to full boil then turn down to low and add beans, rinsed, and whole tomatoes into rest of sautéed vegetables. Add seasoning and salt and pepper to taste. Cook pasta, and add to soup. Garnish with parsley and parm cheese.
