Cinnamon Rolls With Vanilla Frosting

- cinnamon Rolls: shopping list
- 1 cup quick oats shopping list
- 2 cans garbanzo or white beans, drained and rinsed (about 4 cups) shopping list
- 1/4 cup applesauce shopping list
- 2 and 1/2 tsp pure vanilla extract shopping list
- 3 T canola or coconut oil shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 and 1/2 cups sugar or sucanat (Feel free to use less if you’re used to healthy desserts. Or sub some of the sugar with stevia if desired.) shopping list
- 2 T cinnamon shopping list
- vanilla Icing: shopping list
- 2 cups powdered sugar shopping list
- ¼ cup coconut oil shopping list
- 3 Tablespoons non-dairy milk shopping list
- 1 teaspoon vanilla extract shopping list
- 1 pinch salt shopping list
How to make it
- Cinnamon Rolls:
- Blend all ingredients very, very well in a food processor. Pour into an oiled pan. (I used a muffin pan and filled the muffin cups about 1/4 to 1/3 full.) Cook at 350F for around 12 minutes. Let stand at least 10 minutes before removing from the pan.
- Vanilla Icing:
- Place all ingredients in a food processor (I used a hand blender), process until smooth and use immediately. It will solidify after an hour or so. Heat it in the microwave for about 30 seconds to liquify again before drizzling or piping it over your finished baked goods. It will keep in the refrigerator in a covered container for up to two weeks.
