Svizzere Di Salmone Aka Salmon Patties

- 1/3 loaf French of Italian-style bread shopping list
- scant 1 cup milk shopping list
- 1 lemon shopping list
- 14 ounces salmon fillet, chopped (two fillets) shopping list
- 5 tablespoons butter, softened at room temperature shopping list
- 1.5 cups panko or dry, unseasoned breadcrumbs shopping list
- 2 tablespoons oil + more as needed shopping list
- salt and pepper shopping list
How to make it
- Tear the bread into pieces, place in a bowl, add milk to cover and let soak for 10 minutes, then drain and squeeze out, reserving milk.
- Grate the rind of half the lemon and peel the other half, removing all traces of pith from both halves, and slice thinly.
- Combine the salmon, soaked bread and butter in a bowl and season with salt and pepper.
- Divide the mixture into four, shape into balls, then flatten gently with your hand.
- Pour the remaining milk into a shallow dish and combine the bread crumbs and lemon rind in another shallow dish.
- Heat the oil on medium in a skillet.
- Dip the patties first in the milk, then in the bread crumb and lemon zest mixture and fry for 4 minutes on each side.
- Remove with a slotted spatula and drain on paper towels.
- Garnish with the lemon slices and serve immediately.
