Omelette Rice Omurice Recipe
The second dish I've ever made. Know what an omelette is? Like them? How about steamed rice? Answer yes and look below! It's a great way to clear out leftovers!

Ingredients
  • 11/2- 2 cups leftover white rice
  • 4 eggs, beaten
  • 1 small onion, chopped finely
  • 1/2 green pepper, sliced
  • 1/2-1 tomato, diced
  • 1 chicken breast, cooked and diced
  • 4 tbs ketchup
  • Oil

Directions
  1. Pour just enough oil to coat the pan and let heat up on medium heat.
  2. Add the veggies and let them cook up (onion should become tranluscent). Add the chicken and stir 2 minutes.
  3. Add the steamed rice and ketchup, stirring lightly for another minute.
  4. Coat another pan and pour 1/4th of the egg mixture (enough to let it spread over the pan's surface well). Let it cook on medium heat until the edges become easy to lift away from the pan.
  5. Scoop some of the rice mixture onto the egg's midsection. Using a spatula bring the edges together, sealing it.
  6. Place a plate over the pan and flip. The omelette is done! Enjoy with some cilantro on the side and ketchup or soy sauce.

Thanks, that's nice of you to say. It's really handy when all you have in the fridge is leftovers. Plus you can add all manner of veggies. I've made it with mushrooms and no chicken, too, for a vegetarian friend.
