How to make it

  • Peel and cube potatoes. Place in large pot and add corn.
  • Boil in enough water to cover. When fork tender, drain off potato water.
  • Slightly mash softened potatoes.
  • Add milk and cheese, stirring until all cheese is melted. DO NOT BOIL.
  • Add crumbled bacon bits and parsley.
  • Salt and pepper to taste.
  • Garnish with bits of grated cheddar cheese, bacon bits, green onions, etc.
