How to make it

  • Blend the chickpeas and 1 tbsp water. Add more water if necessary, to blend to smooth paste.
  • Add some of the olive oil to a fry pan and warm. Saute spring onion and garlic for a few minutes, then add corn. Add the cumin and saute for a minute or so, then add zucchini and saute till cooked. Remove from heat.
  • Put the chickpea paste in a bowl, add the carrot, cheese and egg, mix.
  • Add the zucchini-corn mixture and combine. Slowly add the breadcrumbs. Do not add so many that you end up with a 'glue' texture. Better to be a little sloppy than gluggy at this point.
  • Heat the oil in the pan. Do not cook more than 2 patties at a time, so dont use all the oil at once.
  • While this is heating, put the crushed cornflakes in a bowl. Form a pattie in your hand, and press into the cornflakes. Turn it gently and do the other side. The patty will probably be quie fragile still. Place it straight into the pan.
  • Start on the next one, get it in the pan and turn the first patty. It should be golden and now quite firm. Place on paper towel and keep going.
  • Great served on a bun with lettuce, tomato, cucumber and taziki.

    I've got a 5 yr old that claims she is a vegetarian..even though she loves shrimp and crab and such...anyway, I've been looking for a good veggie burger. I will give this a try. :)
