Raw Cinnamon Buns

- Buns: shopping list
- 5 dates shopping list
- 1/4 C water shopping list
- 1 C Ground Flax shopping list
- 1 1/4 C almond flour shopping list
- 1 C Spelt Flakes shopping list
- 1 C Chopped pecans (chopped fine) shopping list
- 2 t. cinnamon shopping list
- 3 T. olive oil shopping list
- 1/4 C Agave shopping list
- 1 C water shopping list
- Soak dates. shopping list
- Blend with 1/4 C water to make a smooth date paste. shopping list
- Set aside. shopping list
- Combine flax, almond flour (I use the dehydrated almond pulp left over from making almond milk), finely chopped pecans, and Spelt flakes. shopping list
- In a separate bowl, combine date paste, olive oil, 1/4 C agave and 1 C water. shopping list
- Mix wet ingredients into dry. shopping list
- Spread in a rectangle on a non-stick dehydrator sheet. shopping list
- You want this to be a little less than 1/2 inch thick. shopping list
- Dehydrate at 145 for 30 minutes. shopping list
- Flip onto screen, peel off dehydrator sheet and dehydrate at 115 for another 20 minutes. shopping list
- While the bun is dehydrating, you will want to prepare the filling. shopping list

- 1 Young Thai coconut (the white part) shopping list
- 1 C cashews shopping list
- 1/2 C almonds shopping list
- 1/4 C Raw Agave shopping list
- 1 T vanilla (not raw) shopping list
- 1/2 C raisins shopping list
- Soak almonds and cashews for at least 3 hours to soften. shopping list
- Place in food processor with remaining ingredients except raisins, process until smooth. shopping list
- Stir in raisins. shopping list

- Place “bun” on parchment paper. shopping list
- Spread filling on bun. shopping list
- You can spread to the edges on the long sides but leave an inch or two on the short sides. shopping list
- Gently roll up the roll. Slice and top with icing. shopping list

- 1 C raw cashew butter shopping list
- 3 T maple syrup (not raw) shopping list
- 1 t. cinnamon shopping list
- 3-4 T water shopping list
- Mix all ingredients except water. shopping list
- Add water 1 T at a time to desired consistency. shopping list

- If you are gluten intolerant…try some sprouted buckwheat flower….there is no wheat or gluten in buckwheat.

- Agave is high in fructose. Coconut Secret coconut nectar is low in fructose and has minerals, and they say it’s raw. As for using something instead of the spelt, how about walnuts or pecans or buckwheat or chia seeds?

- You could try cashew flour (cashews ground really fine) instead of the almonds. They have a pretty suttle flavour.

- You can replace the spelt for oats. They are naturally gluten-free, but the way alot of them are manufactured contaminates them with gluten. You just have to find a good source that confirms they are gluten-free.
