Sole Edward VII Recipe
Baked sole, done simply, yet richly, letting the flavors of the fish come through and really shine when paied with a few, simple, but strong ingredients.

Ingredients
  • 1/2 pound unsalted butter
  • 3 oz chopped salted almonds
  • 1/4 pound chopped fresh mushrooms
  • 1 Tbsp chopped fresh parsley
  • Juice of 1 lemon
  • salt
  • pepper
  • 1 tsp nutmeg
  • 2 sole fillets
  • white wine

Directions
  1. Mix butter, almonds, mushrooms, parsley, lemon juice, salt, pepper, and nutmeg.
  2. Salt and pepper the sole fillets, and spread the butter over the fish.
  3. Pour 2 or 3 ounces of white wine in the bottom of the pan with the fillets.
  4. Bake at 375 for 20 minutes, or until fish is done.
