Qataieyf - Arabic Pancakes

For pancakes
- 2 cups all-purpose flour shopping list
- 2 cups warm milk shopping list
- 1/3 cup water shopping list
- 2 tsp dry yeast shopping list
- 1 tbsp white sugar shopping list
- pinch of salt shopping list
- melted butter [for baking in an oven] shopping list
Curd filling
- 200g curd shopping list
- sugar shopping list
apple filling
- 1 apple shopping list
- sugar shopping list
- 1 tsp cinnamon shopping list
How to make it
- Mix yeast with sugar and 1 cup of warm milk. Set aside for 10 minutes.
- Pour in the remaining milk, water, flour, salt and mix everything well. Don't leave any lumps.
- Put in a warm place for 1 hour.
- Take a frying pan and put it on the stove. Let it get really hot, but while baking pancakes, make the heat low.
- Pour the batter in a little jug and pour enough to make a 7-8cm diameter [3in] circles - u don't have to form them.
- Bake only on one side. At first you will start seeing bubbles and then the top will start becoming dry. When the top is dry - the pancake is ready. Put it on a kitchen towel and cover with another one - don't put them one on the another because they will stick together,
Fillings
- For curd filling - mix curd and sugar
- For apple filling - peel and grate an apple, mix with sugar and cinnamon.
Final baking
- Put some fillinf in the center of the pancake and fold it well.
- Spread with melted butter and put them on a baking paper in a baking tray.
- Bake in a preheated oven [180C - 356F] for 10-15 minutes.
