Sponge-cakes With Orange Soufflé

Sponge-cake
- 2 eggs shopping list
- 150g white sugar shopping list
- 150g all-purpose flour shopping list
- 2 tbsp milk shopping list
- 1 tbsp oil shopping list
Souffle
- 200g fresh orange juice shopping list
- 400g whipping cream [35%] shopping list
- 150g white sugar shopping list
- 20g gelatine shopping list
- 150g boiled cold water shopping list
How to make it
Sponge-cake
- Whisk eggs and sugar at max speed until double in size.
- Divide sifted flour into 3 parts and slowly mix in one part at the time.
- Mix in the milk and oil,
- Prepare a 20x26cm [7.9x10.2in] baking tray. Bake in a preheated oven [180C -356F] for 20 minutes. After 15 minutes check with a tooth stick, it may be ready. Let it cool in a baking tray.
Souffle
- Pour water on gelatine and set aside.
- Set aside 4 tbsp of orange juice.
- Whip whipping cream with sugar until stiff.
- Melt gelatine - but don't bring it to boiling!. Let it cool.
- Pour orange juice and gelatine in the whiping cream and slowly mix.
- Put it in a fridge for 15-20 minutes until it starts becoming stiffen.
Finishing
- Water sponge-cake with 4 tbsp of orange juice. Don't take it out of the baking tray. Mix the cream a little bit and pour over the sponge-cake.
- Put it in a fridge for 6-8 hours. Decorate if you wish.
