Tofu "ricotta" Pasta Casserole

- tofu "ricotta" recipe: shopping list
- extra firm tofu (16 oz) shopping list
- 1.5 t salt shopping list
- 1 t dried oregano shopping list
- 1 T. dried basil shopping list
- 3 cloves garlic (as many as you desire) shopping list
- 1 T. nutritional yeast (Red Star) shopping list
- 1 T. lemon juice shopping list
- 2 T. tahini shopping list
- 2 t. amchur (Indian spice green mango ) shopping list
- Put all ingred. into food processor and run til smooth and "ricotta-like". shopping list
- A potato masher or ricer have been recommended in other recipes. Adjust seasonings to taste. set aside. I refrigerated mine--which I made in the morning. shopping list
- The other Fillings: shopping list
- 1 lb. pasta (shells, rotini, ziti, etc. etc) cooked to al dente shopping list
- 1/2 lb. cooked ground meat/onions/garlic (had sauteed gr. turkey in freezer) shopping list
- 1 cup chopped fresh mushrooms( fresh tomato chunks, zucchini slices, etc) shopping list
- 2 T. chopped fresh garlic shopping list
- 1 1/2 cups bok choy, roughly chopped (chard , frozen spinach, fresh spinach, etc etc ) shopping list
- Add to the "ricotta" sauce: shopping list
- 1/2 cup bread crumbs(Italian seas.) shopping list
- 1/4 cup parmesan shopping list
- 1 cup fresh chopped basil leaves(spinach may sub) shopping list
- 1 egg, slightly beaten shopping list
- 1/2 cup Grated mozzarella(Galaxy soy or rice "mozzarella) shopping list
- Jar of marinara, ie tomato basil shopping list
How to make it
- Oil a 9 X 13 inch pan or( 2 ) 2quart casseroles. ( I made half a recipe
- and it barely fit in the 2 quart.)
- combine the meat, chopped veggies and garlic in one pile.
- open the parmesan and the marinara sauce. Line up the grated cheese. plus The Pasta, and The Fake Ricotta
- and layer, starting with tomato sauce --a big dollop on the bottom of the casserole--2 or 3 in the rectangular pan and layer every ingredient group a couple of times. ending with marinara + a sprinkling of parmesan. Cover and bake about 50 minutes, when bubbling.
