Salmon And Feta Muffins

- 275g plain flour, sifted shopping list
- 1tsp baking powder shopping list
- 1big handful baby spinach leaves, destalked and finely chopped shopping list
- 100g grated mozzarella (substitute any firm cheese you like here) shopping list
- 250ml low fat milk shopping list
- 75g butter, melted shopping list
- 150g sliced smoked salmon, flaked shopping list
- 150g feta cheese, crumbled shopping list
- 4 pickled pimento peppers, chopped shopping list
- 1egg shopping list
- 1/2tsp sweet paprika shopping list
- salt and pepper to taste shopping list
- Parmesan for topping shopping list
How to make it
- Preheat oven to 190celcius using fan bake option if you have that, otherwise 200
- Put flour, baking powder, chopped spinach, grated cheese and peppers in one bowl
- Melt butter and mix into another bowl containing all the other ingredients
- Pour contents of wet bowl into dry bowl (hope it was big enough!)
- Mix with a metal spoon, just long enough to combine them
- Turn mix portions out into a greased, twelve slot muffin baking pan
- Bake on middle shelf for 24 minutes (ovens may vary!)
- Let cool just long enough so as not to burn your mouth
- Enjoy
