Chicken Stock

- 1 whole chicken (skin, bones and all) shopping list
- 3 whole carrots shopping list
- 1 large onion ( I prefer yellow) shopping list
- 2 ribs of celery shopping list
- 3 cloves of garlic shopping list
- 1 Tb. salt shopping list
- small handful of fresh flat-leaf parsley shopping list
- 1 tsp. dried thyme shopping list
- fresh ground black pepper to taste. shopping list
- 2 bay leaves shopping list
How to make it
- Place all ingredients in a large pot. Cover with water about an inch over the chicken.
- Bring to a boil. Cover and reduce heat to simmer.
- Simmer for 45 minutes to an hour, or until the chicken is cooked through and the meat is falling off the bone.
- Carefully remove the chicken from the pot to a large bowl.
- Pour the stock with the vegetables through a strainer into a large bowl or another pot.
- Press the vegetables some to get more of their goodness into the stock.
- (Note: I always have to adjust the salt, frequently I don't put enough in.)
