How to make it

  • Place all ingredients in a large pot. Cover with water about an inch over the chicken.
  • Bring to a boil. Cover and reduce heat to simmer.
  • Simmer for 45 minutes to an hour, or until the chicken is cooked through and the meat is falling off the bone.
  • Carefully remove the chicken from the pot to a large bowl.
  • Pour the stock with the vegetables through a strainer into a large bowl or another pot.
  • Press the vegetables some to get more of their goodness into the stock.
  • (Note: I always have to adjust the salt, frequently I don't put enough in.)

    There are as many recipes for chicken stock as people making it and we all have our own little quarks. Do you do anything to remove the oil from the stock? "Stock" is usually pretty fat free. RJ
