How to make it

  • Dice up the tomatoes and discard the juices and seeds.
  • Dice up the peppers (green & jalapeno) and discard the seeds.
  • Dice up the onion.
  • Combine the tomatoes, peppers, and onion in a large salad bowl.
  • Take off the leaves from the stems of cilantro and mince up the leaves. You can use some of the stems if you want.
  • Place in with the bowl mixture.
  • Cut each lime in half and then squeeze the limes so that the juice goes all over the vegetables. If you have a citrus squeezer, this works perfectly.
  • Dash some salt over it and then mix in. If you like, you can also put a tablespoon or two of apple cider vinegar in to give it a little kick. Whatever is left over, cover and place in fridge. It tastes better when left overnight to marinate.
