Moroccan Red Lentil Soup

- 1/2 cup chopped onions shopping list
- 1/2 cup chopped celery shopping list
- 1/2 cup chopped carrots shopping list
- 2 tsp fresh grated ginger shopping list
- 1 large clove of garlic minced shopping list
- olive oil shopping list
- 8 cups of water or vegetable broth shopping list
- 1 cup of red lentils shopping list
- 1 19 oz can white kidney beans shopping list
- 1, 15 oz can chickpeas shopping list
- 15 oz can diced tomatoes and their liquid shopping list
- 1-2 tsp garam masala or to taste shopping list
- 1-2 tsp ground coriander or to taste shopping list
- 1-2 tsp cumin or to taste shopping list
- 1-2 tsp cayenne pepper or to taste shopping list
- kosher salt to taste shopping list
How to make it
- In some oil saute the onion, ginger and garlic till softened
- Stir in the carrots and celery
- Add remaining ingredients
- Bring to a boil
- Cover and simmer until lentils are tender
- Correct seasonings
- Serve hot
- Note:
- Cool and store covered refrigerated a day or so to blend flavors even more.
