How to make it

  • peel and dice squash
  • dice onion and garlic
  • put butter in pan with squash, onion and garlic
  • saute for about 10 min until onion is soft
  • add can of coconut milk
  • reduce heat to simmer for about 30 minutes until squash is soft
  • use a hand blender to blend mixture until creamy and smooth
  • add salt and pepper to taste
  • add water if the soup is too thick
  • garnish with a dallop of sourcream and diced green onions on top

    Very nice :) Made almost the same soup this week, just infused the coconut milk with some lemongrass and ginger. Gotta love pumpkins ...
