How to make it

  • In a skillet saute the onions and celery until softened in some olive oil, lastly add the garlic- like wise one can cook veges in the micro
  • In another pan saute the mushrooms until reduced in size
  • In a large bowl place the cubed bread
  • Add the onions and celery and mushrooms with any liquid/oil from the pan
  • Add the parsley, melted margarine and eggs.
  • Now add enough chicken broth to moisten and soften the mixture but not make it soggy- like a meatloaf consistency
  • Add the spices and salt and pepper to taste
  • Lastly add the dried cranberries if using and mix in the choice of meat if using.
  • Either stuff the turkey ( you wont use it all) or place in casserole dishes and bake 350F covered about 45 minutes and uncover the last 15 minutes if a browned topping is desired
  • Yield: 3 round 9 inch pans or enough to stuff a turkey plus a casserole dish
  • Note: flavor improves with age and firms up as it cools
