How to make it

  • Start by mixing the flour, baking powder and salt. For now set this mixture aside.
  • In a round cake tin (23 cm in diameter) bake 50g of butter and soft brown sugar at 180 C / Gas mark 4 until the butter starts to bubble.
  • Mix the 75 g butter with the caster sugar until fluffy.
  • Add the egg and vanilla essence to the butter and mix everything together.
  • Once you have done this alternatively add a bit of milk and flour until completely incorporated.
  • Cut the plums in half, remove stones and slice thinly. Arrange plums around the edges of the tin then sprinkle the blueberries.
  • Pour the batter on top of the fruit covering them completely.
  • Bake in the oven at 180 C / Gas mark 4 for 40 minutes or until a cocktail stick inserted into the centre of the cake comes out clean. When done take out of the oven and let it cool for 15 minutes.
  • Put a plate on top of the cake and turn it upside down (careful not to burn yourself), remove the tin and cut as you wish ready to serve.
