Plum And Blueberry Upside Down Cake

- - 150 g plain flour shopping list
- - 1 1/2 tsp baking powder shopping list
- - pinch of salt shopping list
- - 50 g butter shopping list
- - 50 g soft brown sugar shopping list
- - 75 g butter shopping list
- - 200 g caster sugar shopping list
- - 1 egg shopping list
- - 1 tsp vanilla essence shopping list
- - 175 ml milk shopping list
- - 4 plums shopping list
- - 125 g blueberries shopping list
How to make it
- Start by mixing the flour, baking powder and salt. For now set this mixture aside.
- In a round cake tin (23 cm in diameter) bake 50g of butter and soft brown sugar at 180 C / Gas mark 4 until the butter starts to bubble.
- Mix the 75 g butter with the caster sugar until fluffy.
- Add the egg and vanilla essence to the butter and mix everything together.
- Once you have done this alternatively add a bit of milk and flour until completely incorporated.
- Cut the plums in half, remove stones and slice thinly. Arrange plums around the edges of the tin then sprinkle the blueberries.
- Pour the batter on top of the fruit covering them completely.
- Bake in the oven at 180 C / Gas mark 4 for 40 minutes or until a cocktail stick inserted into the centre of the cake comes out clean. When done take out of the oven and let it cool for 15 minutes.
- Put a plate on top of the cake and turn it upside down (careful not to burn yourself), remove the tin and cut as you wish ready to serve.
