Spinach Omelet

Discovering I liked semi-burned butter with spinach by mistake, I made this. Its really good with tomatoes added as well
Ingredients
- 1/2 bag spinach shopping list
- 4 eggs shopping list
- 1/2 c shredded cheese of choice (pictured with cheddar/jack mix), plus a bit for topping shopping list
- 1/4c chopped shallots shopping list
- 1 T butter shopping list
- seasoning to taste (I used garlic powder and pepper. The browned butter had enough salt) shopping list
How to make it
- Let butter melt and lightly brown in skillet over med heat
- add spinach, cover and let cook til flat See Photo
- Remove cover and let spinach brown a bit
- While spinach is cooking mix eggs, shallots, and seasoning
- Gently pour eggs over spinach, See Photo
- Sprinkle on cheese then cover over med-low heat till done to your liking
- Using 2 spatulas fold into omelet and sprinkle on some cheese
