How to make it

  • Beat the cheeses until smooth and creamy
  • Beat in the egg then sugar and vanilla
  • Sift flour and baking powder and salt
  • Beat into creamed mixture until smooth
  • Batter will be thick
  • Stir in the chopped cranberries and nuts
  • Place into a well greased and floured bundt pan
  • Bake in a preheated 350F oven until tested done in center with wooden toothpick, about 50- 55 minutes
  • Briefly cool in pan
  • Invert to cool completely
  • Wrap in foil
  • Let flavors mellow a few hours or overnight before serving
