White Pita Pizza

- First, spray the baking sheet and set the oven for 425 F shopping list
- INGREDIENTS for White Pita Pizza shopping list
- 1 whole wheat pita ( i use "pita alwatan) 10-12 inches diameter shopping list
- The White Topping (recipe below) shopping list
- 2 Tablespoons pesto shopping list
- Pre-bake the pita 4 minutes. I sprayed both sides of the pita and flipped it over and baked 5 minutes more. When pita pre-baked, assemble the pizza (s) And into the oven for 6-7 minutes shopping list
How to make it
- Tofu Ricotta--from GR member Senderob :
- Firm silken tofu (12 oz)- Rinse off with fresh clean water first.
- 2 t. lemonjuice
- 2 t. evoo ( I left it out)
- 1/4 t. salt (i used seasoning salt)
- scant 1/4 cup nutritional yeast (Red Star)
- 1/2 t. pizza seasoning (Frontier)
- 1/2 t. dry basil leaves
- stir tofu, lemon juice, oil, nutrit. yeast, and seasonings together until it looks a bit lumpy, like ricotta!! Let it sit 15 minutes to" marry one another".
- White Topping --enough for 4 pita pizzas
- 3/4 cup ricotta ( i use tofu "ricotta")
- 1/2 to 3/4 cup mozzarella ( i use galaxy tofu mozzarella)
- 1/4 cup parmesan
- 1 large clove garlic chopped finely
- a few Tablespoons pesto
- Combine the ricotta, cheese, parmesan cheese, garlic and combine together. (chopped bell peppers, onions, thinly sliced brussel sprouts... the sky's the limit) Stir in optional additions
- This can be made a day ahead . After spooning the white topping on the pizza, dollop a few Tablespoons of pesto. I keep my homegrown in the freezer, and got a bit out with the point of a knife, turned around and around, like drilling down deeply. A few mini-chunks were released. (next yr, I'll freeze it in ice cube trays)
