Guanimes De Plátano Verde (green Plantain Guanimes)

- 3 Large Green plantains, Peeled and Soaked in salted water shopping list
- 1/2 tsp Salt shopping list
- 1/2 C plus 2 tbsp of sugar shopping list
- 1 C coconut milk shopping list
- 1/2 tsp anise seeds shopping list
- 12 Pieces of banana leaf 10 x 10 and Kitchen twine shopping list
How to make it
- Drain the plantains from the salted water grate either by hand or food processor (which ever you have at hand) Measure 3 densely packed cups.
- Mix well the salt, sugar, coconut milk, and anise seeds
- Blend with the grated plantain
- One inch off the edge of the leaf spread a narrow 4" rectangle of the mash.
- Bring the edge over the mash and start rolling until you reach the edge of the leaf
- Tie the ends securely with the kitchen twine
- Bring to a boil 3 Qt water with 1 tbsp salt. Put the Guanimes, cover and lower the heat. Simmer for 30 mins.
- NOTE: Unwrap and serve warm as an snack or you can eat with bacalao
