How to make it

  • Rinse and pat dry the chicken
  • Rub well with the salt
  • Mix the garlic, oregano, pepper, and olive oil. Rub the chicken all over. Cover and let stand for at least 1 hr.
  • Heat the shortening over med-high heat in a large caldero or deep fryer until it forms a haze over the surface (375 F).
  • In the meantime, dredge the chicken pieces with the flour, shaking off the excess.
  • Fry the chicken pieces at med-high heat for 5 mins on each side
  • Reduce the heat to moderate, cover the pot and fry for an additional 10 mins.
  • Uncovered the pot, raised the heat to high and keep frying for some 5 mins, or until the chicken is golden brown.
  • Drain on paper towels and serve warm.
