Pollo Frito ( Fried Chicken)

- 3 Lbs chicken pieces shopping list
- 2 1/2 tsp salt shopping list
- 4 Pressed Med garlic cloves shopping list
- 1/4 tsp ground oregano shopping list
- 1/4 tsp ground pepper shopping list
- 2 Tsp olive oil shopping list
- 4 C lard or oil shopping list
- 3/4 C flour shopping list
How to make it
- Rinse and pat dry the chicken
- Rub well with the salt
- Mix the garlic, oregano, pepper, and olive oil. Rub the chicken all over. Cover and let stand for at least 1 hr.
- Heat the shortening over med-high heat in a large caldero or deep fryer until it forms a haze over the surface (375 F).
- In the meantime, dredge the chicken pieces with the flour, shaking off the excess.
- Fry the chicken pieces at med-high heat for 5 mins on each side
- Reduce the heat to moderate, cover the pot and fry for an additional 10 mins.
- Uncovered the pot, raised the heat to high and keep frying for some 5 mins, or until the chicken is golden brown.
- Drain on paper towels and serve warm.
