How to make it

  • Put all ingredients for the chickpeas in a slow cooker, cook on low for 6-8 hours ( I do it overnight ).Add salt to your liking, let cool in broth, then strain. Reserve the broth and discard onion and carrots.
  • Drop garlic onto running steel blade in Cuisinart, than stop the machine and add chickpeas, tahini, lemon juice, broth, cumin and oil. Process until very smooth, evtl. add some more oil or broth. Adjust seasonings, put in serving bowl, sprinkle with some paprika and drizzle olive oil over the top. Serve with crackers, pita bread or veggie sticks.
