Lemon Pancakes

Those lemon pancakes are a stable in our house, I make them at least 2 times a month. They whip up fast and easy, the only fancy thing about them is the beaten egg white. but that makes them so fluffy ...
Ingredients
- 1 c AP flour shopping list
- 1/4 c sugar, or less shopping list
- 1/2 ts salt shopping list
- 1 c milk shopping list
- 2 tb butter, melted or oil shopping list
- 3 egg, separated shopping list
- 2 lemon, the peel, grated ( I use meyer lemons ) shopping list
- 1 ts baking powder shopping list
How to make it
- Beat the egg whites stiff.
- Mix all dry ingredients, add milk and stir, until smooth. Stir the egg yolks, until smooth, than add, with the butter or oil and the lemon peel to flour/milk mix. Stir, than fold in stiff egg whites.
- Heat a griddle and bake pancakes. serve with maple syrup and fruit.
