How to make it

  • Soak the tapioca overnight. Early in the day, butter thickly a 1 1/2- quart (21) baking dish. Peel, core, and quarter the apples and lay in the dish. Pour the drained tapioca over, mixing it gently through the fruit. Sprinkle with salt and add enough water until the tapioca is covered. Place in a 375 degree F.(190 C) oven and cook for 1/2 hour. Add 1/2 cup (110 ml) sugar and stir gently to prevent the tapioca from caking. Allow to cook another 1/2 hour and add 1/4 cup (55 ml) sugar and the lemon juice and sprinkle with cinnamon.Stir gently, being careful not to break the apples.Allow to cook for another 15 minutes or until the tapioca is clear and tender. Chill before serving with or without cream.
