How to make it

  • Heat the milk in the top of a double boiler over boiling water. Mix together the egg yolks, sugar, and salt and stir in a little hot milk. Then add egg mixture to remaining hot milk, stirring constantly over boiling water until mixture thickens enough to coat the spoon. Add vanilla and chill. Pour the cooled custard into serving dishes. Drop 2 cups (450 mbl) fresh strawberries, halved, into custard around sides of dishes. Top with cooled meringues for floating island.
  • Meringues:
  • Beat the agg whites until foamy; slowly add sugar. Continue to beat until very stiff. Lower heaping Tablespoon (30 ml) of beaten whites into a saucepan of hot water. Cover pan and simmer over a low heat for 1 minute or until meringue doubles in size. Removevwith slotted spoon and place on a cake rack to drain for 15 minutes. Arrange on chilled custard.
