Lemon Cake

Delicious lemon cake, light and fluffy
Ingredients
- 125 g butter shopping list
- 1 cup sugar shopping list
- 3 eggs shopping list
- 1 tsp vanilla extract shopping list
- 1 1/4 cups all-purpose flour shopping list
- 1/2 tsp baking powder shopping list
- 1.5 tbsp lemon juice shopping list
- lots of lemon zest shopping list
How to make it
- Preheat oven to 180 degrees C. Grease and flour an 8 inch pan
- in a medium bowl, cream together the butter and the sugar
- Beat in the eggs and vanilla
- Combine flour and baking powder and mix thoroughly
- Finally stir in zest and juice until the batter is smooth
- Pour batter into prepared pan
- Bake for 40 - 45 mins or until a cocktail stick comes out clean
