How to make it

  • Heat the oil in a cast iron pot over medium heat.
  • Add onion, peppers, okra, and celery and sauté for 10 minutes.
  • Add the shrimp and cook until the shrimp turn pink, about 2 minutes.
  • Add the sausage and cook for 2 minutes.
  • Add tomatoes (with juice), garlic, salt, spices, sauces and stock. Cook for 10 minutes, stirring often.
  • Add the rice and stir to mix.
  • Cover and cook over medium-low heat for 30 minutes, until the rice is done and most of the liquid is absorbed. Stir occasionally.
  • Stir in green onions, and simmer for 10 minutes.
  • Remove from heat and let stand for 5 minutes.
  • Serve and enjoy.
