Authentic Creole Jambalaya

- 1/4 cup olive oil shopping list
- 1 1/2 cups chopped onions shopping list
- 1/2 cup chopped green pepper shopping list
- 1/2 cup chopped red pepper shopping list
- 1/2 cup chopped celery shopping list
- 1/2 cup sliced okra shopping list
- 1 lb medium shrimp, peeled and deveined shopping list
- 1 lb smoked andouille sausage, sliced into 1/4" rounds shopping list
- 1 (28oz) can chopped tomatoes shopping list
- 1 tbs chopped garlic shopping list
- 1 tsp salt shopping list
- 1/2 tsp cayenne shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp dried thyme shopping list
- 1 tsp smoked paprika shopping list
- 1/2 tsp red pepper flakes shopping list
- 1 tsp Franks red hot shopping list
- 1 tsp worcestershire sauce shopping list
- 1/4 cup barbecue sauce shopping list
- 1 cup chicken stock shopping list
- 2 cups long-grain white rice shopping list
- 1/4 cup chopped green onions shopping list
How to make it
- Heat the oil in a cast iron pot over medium heat.
- Add onion, peppers, okra, and celery and sauté for 10 minutes.
- Add the shrimp and cook until the shrimp turn pink, about 2 minutes.
- Add the sausage and cook for 2 minutes.
- Add tomatoes (with juice), garlic, salt, spices, sauces and stock. Cook for 10 minutes, stirring often.
- Add the rice and stir to mix.
- Cover and cook over medium-low heat for 30 minutes, until the rice is done and most of the liquid is absorbed. Stir occasionally.
- Stir in green onions, and simmer for 10 minutes.
- Remove from heat and let stand for 5 minutes.
- Serve and enjoy.
