Easy Spinach Quiche

- 1/2 cup butter shopping list
- 3 cloves garlic chopped shopping list
- 1 small onion chopped shopping list
- 1 (10 ounce) package of frozen chopped spinach thawed and drained shopping list
- 1 (4.5 ounce) can of mushrooms, drained shopping list
- 1 (6 ounce) package of herb and garlic feta cheese, crumbled shopping list
- 1 (8 ounce) package of shredded cheddar cheese shopping list
- 4 eggs beaten shopping list
- 1 cup milk shopping list
- salt and pepper to taste shopping list
- 1 (9 inch) unbaked DEEP dish pie crust or two thawed previously frozen regular pie crusts. shopping list
How to make it
- Preheat oven to 375 degrees
- In a medium saute pan melt the butter over medium heat.
- Saute garlic, and onion in the butter until lightly browned...about 7 minutes.
- Stir in spinach, mushrooms and feta and 1/2 cup of cheddar cheese.
- Season with salt and pepper.
- Set pan aside off of heat.
- In a large bowl whisk together eggs and milk.
- Pour contents of pan into large bowl with egg mixture and mix thoroughly.
- Pour contents of the large bowl into pie crusts.
- Bake in a preheated oven for about 15 minutes. Then sprinkle top with remaining cheddar cheese.
- Bake for an additional 35-40 minutes until quiche is set in the center.
- Allow to stand for about 10 minutes before serving.
