Fettuccine With Roasted Tomatoes In Gremolata Sauce

- 3/4 lb. Vince's Gourmet Imports homemade fettuccine (Substitute a high quality fettuccine) shopping list
- 1 1/2 cups grape tomatoes, halved shopping list
- 5 chicken tenderloins shopping list
- 4 tbs salted butter shopping list
- 6 tbs F. olivers Garden Fresh Gremolata extra virgin olive oil (Substitute a high quality lemon flavored EV olive oil and add a clove of minced garlic) shopping list
- 1/4 cup heavy cream shopping list
- 3/4 cup crumbled feta cheese shopping list
How to make it
- Boil the water for the pasta.
- Heat the oven to 400. in a baking dish lay the halved grape tomatoes flesh side up and roast for 15 minutes.
- In a pan, add 2 tbs of F. Olivers Garden Fresh Gremolata extra virgin olive oil and heat on medium high. Add the chicken and cook thoroughly.
- Once the chicken is cooked, shred the chicken and let rest.
- In the same pan, deglaze the pan with the butter, 4 tbs of olive oil, and heavy cream.
- Add the shredded chicken back to the pan and simmer the sauce until it thickens slightly. Once thickened, set the heat to low.
- Drain the Fettuccine, and remove the roasted tomatoes.
- In a serving bowl, place the Fettuccine, and top with the tomatoes, sauce with chicken, and feta cheese.
- Toss, serve, and enjoy!
