Great Vegetarian Chili

- 2 cups TVP, textured soy protein granules, I prefer non gmo, organic shopping list
- 2 cups boiling water, or vegetable broth shopping list
- 1 large onion chopped shopping list
- 1 small bell peppper chopped, here I used a yellow one shopping list
- 3 canned chipotle chilis in adobo sauce chopped shopping list
- 8 oz chunky salsa- I used medium hot shopping list
- 1 Tbs malt vinegar- gives a unique zing shopping list
- 2 tsp cumin shopping list
- 1 tsp chili powder shopping list
- 1 can rinsed black beans shopping list
- salt and pepper to taste shopping list
- optional: different kinds of beans, kernal corn,chopped cilantro shopping list
How to make it
- Saute or micro cook the chopped onions and bell peppers till soft
- Pour hot liquid over the vegetable protein, stir, cover let stand 5 minutes to soften in a pot
- Add remaining ingredients and mix well.
- Reheat, correct seasoning
- Serve with sliced avocado and tomato salad and a side of cornbread if desired
- Note: add spices and herbs as you like.
