Orange Chocolate Mayonnaise Cake

I think everyone has their mom's or grammas, moist, tasty, mayonnaise cake recipe. Most all are chocolate based. Here is a standard 1960's recipe with the liquid (coffee, milk, water etc ) being replaced with orange juice. Read more I have also made similar without adding any baking cocoa and it came out well. However the chocolate and orange are just great combinations together and one can really taste the orange flavor in this moist cake. Frosting or a glazed or powdered sugar is optional. See less
Ingredients
- In a bowl sift: shopping list
- 2 cups flour shopping list
- 1 cup sugar shopping list
- 2 tsp. baking soda shopping list
- 3 heaped Tbs of baking cocoa shopping list
- 1/2 tsp baking powder shopping list
- Add: shopping list
- 1 cup orange juice shopping list
- 1 cup mayonnaise ( not salad dressing ) shopping list
- 1 tsp vanilla or 1 tsp orange extract shopping list
- orange zest is optional shopping list
How to make it
- Beat all bowl ingredients well until smooth
- Place in a pan ( greased and floured ) of which batter will be 1/2 full
- I used an 8 x 10 inch biscuit type pan
- Bake until wooden toothpick comes out clean in center
- Cool on rack
- May frost or glaze cake cake if desired. powdered sugar is also nice
- Note: some people also like to include in their mayo cakes: chopped nuts, chocolate chips, raisins etc.
- I think some grated orange zest would also be nice too.
