Apple Crumble Slab Pie

Crust:
- 2 cups flour shopping list
- 1 tbsp ground flax seed shopping list
- 1/4 tsp salt shopping list
- 1 tsp baking powder shopping list
- 2/3 cup shortening or butter shopping list
- 1/3 cup cold water shopping list
- ½ tsp vinegar shopping list
Filling:
- 2 tbsp butter shopping list
- 7 apples - peeled, cored and cut into thin wedges (I used a mix of 3 Honeycrisp and 4 Jonagold) shopping list
- ½ cup sugar shopping list
- ½ cup Pyure Bakeable Blend stevia Sweetener shopping list
- 1 tsp cinnamon shopping list
- 2 tbsp cornstarch shopping list
- ¼ cup cold water shopping list
Topping:
- ½ cup flour shopping list
- 1 1/3 cups rolled oats shopping list
- ½ cup brown sugar shopping list
- ½ cup butter shopping list
- ¼ cup milk shopping list
How to make it
Crust:
- In a large bowl, combine flour, flaxseed, salt and baking powder.
- Cut in shortening until mixture resembles coarse crumbs.
- Mix egg, water and vinegar together and mix into flour until it forms a ball. Wrap in plastic and refrigerate at least one hour or up to overnight.
Filling:
- In a pot, combine butter, apples, sugar and cinnamon. Place over medium heat and cook until apples begin to soften.
- Whisk together cornstarch and cold water, pour into the apple mixture and cook until liquid thickens, about 1 minute. Let cool at least 30 minutes.
Topping / Assembly:
- Preheat oven to 350 F.
- Roll out the crust to fit the bottom of a 10x15 inch sheet.
- Pour filling into pie crust, smoothing into an even layer.
- In a medium bowl, combine flour, oats, brown sugar, butter and milk until crumbly.
- Sprinkle over apples.
- Bake in the preheated oven for 60 minutes, or until topping is golden brown.
