How to make it

  • Remove/slip skin from potatoes while potatoes are warm
  • Cube as desired
  • Place in a large mixing bowl
  • Gently stir in parsley and chives or5 onions
  • Place the mayo and mustard over the mixture
  • Sprinkle on the salt and pepper
  • With a spoon gently mix potato salad
  • Lastly gently stir in the hard boiled eggs
  • Either serve warm or well chilled
  • Note: I used chive flowers for ganish

    This is a good salad. I say that because it's the same as mine with one difference--I usually add a bit of relish. Sometimes sweet, sometimes dill depending on who I am making it for. BTW I save those black take-home containers too just for pot-lucks. :-)
