How to make it

  • Beat shortening, butter, brown sugar, honey, egg yolk, almond milk and vanilla until well blended.
  • Beat in the flour, baking soda, salt, nutmeg and ginger
  • Stir in oats, walnuts, bananas and chocolate covered cacao nibs.
  • Wrap in plastic and refrigerate 1 hour, or up to overnight.
  • Preheat the oven to 375ºF and line baking sheets with parchment.
  • Bake cookies 12 minutes. Cool on baking sheet.
